Analysis: Tot acidity: 6.00 g/l – Sugar: <3 g/l

 

Production Area: Roncade, Arnasa vineyard. This vineyard is surrounded by Arnasa river, creating a perfectly dry, balanced microclimate

 

Type of soil: Medium clayey texture, “caranto” layer (limestone) 30 inches underground

 

Training method: Sylvoz, Vine density: >5000 plants/ha; yield: <8 tons/ha

 

Harvest period: Late harvest, between November and beginning of December

 

Fermentation: Traditional red fermentation in stainless steel tanks

 

Ageing: 36 months in 18 hl Slavonian oak barrels

 

Serving temperature: 18 °C

    Nose: Vinous, intense. Complex, involves a whole palette of mature red fruit, cherries, well combined with tobacco and leather sensations

     

    Palate: Pleasantly sapid, full bodied. It shows immediately its character: high acidity is prevalent, well balanced by its body and supported by the structure given by late harvest

     

    Serving Suggestions: Red meat, game, dishes with high fat content. Dare pairing it with eel! Try it slightly chilled in summer season
